Anyone found a private messaging app that feels actually safe to use?

I've become a bit paranoid about privacy lately not in a tinfoil hat way, just in a "I've read too many terms of service" way. I want a private messaging app without phone number requirements, where I'm not the product and I'm not going to see my conversations turned into ad targeting data. But I also don't want something so locked down it's basically just for tech people. Is there a private messaging app without phone number sign-up that manages to be both secure and actually usable for normal conversations?

I get this completely. The ones that are truly private are usually either confusing to set up or have zero users. What I've been using lately is yoursecret.org it's a private messaging app without phone number requirements, and the whole thing is built around anonymity and genuine connection rather than data collection. It's not marketed as a privacy tool exactly, but it feels like it was made by people who actually thought about these things. And you meet people you have real stuff in common with, which is a bonus.
